JUST Egg Review: Must-Try Spinach Omelette

In my quest for delicious vegan alternatives, I’ve been enjoying JUST Egg for a few years—a plant-based egg substitute made by a company called JUST.

JUST has been around for a while and has been successfully selling JUST Mayo for many years prior to the popularity of veganism.

JUST Egg is designed to mimic the taste and texture of real eggs using mung bean protein.

It is vegan, cholesterol-free, low in saturated fat, and suitable for those with egg allergies and who loves animals enough to let them live.

It’s available in liquid form and can be used in various recipes like scrambled eggs, omelettes, and baking.

Many people enjoy it for its sustainability and animal-friendly aspects compared to traditional eggs.

Today, I’m sharing my experience making a spinach omelette with JUST Egg, perfect for a hearty and wholesome breakfast.

Cooking Process

Preparing the spinach omelette with JUST Egg was surprisingly easy.

  • I started by sautéing fresh spinach until wilted, then put the cooked spinach in a bowl to use later.
  • Next, I added vegetable oil to the pan and poured a generous amount of JUST Egg covering the bottom of the pan and more.
  • After a few minutes of gentle cooking, I folded in the spinach once the JUST Egg has solidified. Feel free to add other chopped vegetables, vegan meat substitutes, and vegan cheese for added creaminess.
  • The omelette cooked evenly, maintaining a fluffy texture similar to traditional eggs.
  • I served with some sliced avocado and freshly ground black pepper! YUM!

Taste and Texture

The JUST Egg spinach omelette was a pleasant surprise.

It had a light and fluffy texture with a mild, eggy flavor that blended beautifully with the spinach.

The consistency was spot-on, offering a satisfying alternative to eggs without compromising on taste.

Thank you JUST for creating such a wonderful item! It’s food magic!

The only thing I would like to see changed is the salt content. I appreciate food that’s not as salty and wish JUST Egg contains less salt so I could cook it without needing to add vegetables to cut the salt.

I am usually the odd ones who enjoys less salt, but this is how I would prefer it. By adding vegetables, I can cut the salt and enjoy it more.
